Lunar New Year Recipe: Vegetarian Dumpling Filling

 
 
 

VEGETARIAN DUMPLING FILLING
(FROM HANNAH C.)

Ingredients:

  • 2 bundles glass noodles

  • 1.5 cup napa cabbage, shredded

  • 6 Eggs

  • 2 cups dried shiitake mushrooms, hydrated and chopped

  • 1 cup Chinese chives, finely chopped

  • 1/2 tsp white pepper

  • 2 tsp sesame oil

  • 3 tbsp shaoxing wine

  • 2 tbsp sugar

  • 1 tsp sugar

  • 1 tbsp Ginger, minced

  • Salt

  • Preferred wrapper/dough for dumplings

Steps:

  1. Follow directions on glass noodle package to boil. Once translucent, drain and rinse with cold water, sprinkle sesame oil on top. Cut into small pieces using scissors.

  2. In a large wok or pot, heat some oil and scramble the eggs

  3. Once eggs are almost done, add chives, ginger, cabbage, and shitake mushrooms

  4. Cook until wilted, then add glass noodles and all the sauces/spices. 

  5. Mix until combined, turn heat off

  6. Add additional sauces/spices to taste

  7. Let cool before wrapping
